| Spicy Lime Grilled Seitan Kabobs |

Ingredients:

1 16-ounce-jar Seitan (wheatmeat) |
| |
15 whole button mushrooms |
| |
1 green bell pepper, cut into chunks |
| |
1 sweet onion, quartered, separated |
| |
2 zucchini, cut into 1/2 |
| |
2 yellow summer squash, cut into 1/2" chunks |
| |
3/4 cup lime juice |
| |
2 tablespoons Barley Malt |
| |
3-4 cloves garlic, minced |
| |
1 tablespoon minced onion |
| |
2 tablespoons finely chopped Cilantro (chinese parsley) |
| |
1/4 teaspoon salt |
| |
1/4 teaspoon black pepper |
| |
1/3 cup extra virgin olive oil |
|
| |
Directions:
Mix marinade and pour over seitan and vegetables. Marinade at least 2 hours, preferably longer.
Skewer ingredients and broil or grill until veggies are done to your likeness.
